Brownies for Breakfast

I woke up this morning with the baking bug.  Some days I just need to bake something.  Actually, I would love to bake every day, but I don’t always have time.  Plus due to my ginormous sweet tooth, it wouldn’t be a good idea to have all those goodies in my house.  But this morning I had to bake brownies for my stepdad.  He’s been doing me quite a bit of favors lately, so I figured I owed him a pan of brownies.

Rich and Chewy Low Fat Brownie

  • 1/2 cup cocoa
  • 1 cup whole wheat pastry flour
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 2 Tbsp butter
  • 1 1/2 cup sugar
  • 3/4 cup unsweetened applesauce
  • 1/2 cup semi sweet chocolate chips

Cream butter and sugar with a stand or hand mixer.  Add egg whites, applesauce and vanilla.  Mix dry ingredients in a separate bowl.  Add dry ingredients to wet ingredients just until combined.  Do not overmix!  Pour into a prepared 8×8 pan and bake at 350 F degrees for 35 minutes.  Once cool, cut into 25 servings.

These brownies turned out very fudgey and ooey gooey chewy!  I might experiment next time and decrease the sugar to 1 cup.  They were pretty rich.

I only had one with my breakfast.  Licking the spatula doesn’t count.

I’m a big Mexican food fan.  I could live on refried beans.  For lunch, I made myself a bean and cheese quesadilla made with a whole wheat tortilla by La Tortilla Factory.

The quesadilla was paired with a cup of grapefruit.  Wierd combo, I know.  But supposedly grapefruit really does have compounds in it that help you shed fat.

Off to the gym!  Gotta do a killer leg workout.  My legs haven’t felt like jello in a while…

Celebrity Bakery Lunch

Another perfect morning to walk my puppies.  My mom said that Rizzo had on his bling.  He was ready to go.  Always waitin’ on his momma.

 

Later in the morning, a guy from Closets by Design came over for a free consultation.  I have already gotten a quote from California Closets to do my master closet, so I really just wanted to shop around and get some different ideas/prices.  Well, 3 hours later, I put down a deposit and picked out my closet design!  It will probably be another month before they can install it.  I will be in closet heaven!

My mom and I went to Celebrity Bakery for a late lunch.  It was a toss up between a turkey club or a cobb salad.  I went with the Cobb.


It did not disappoint.  They make their own ranch.  It is delicious.  Something is different about it, but I can’t quite figure out what they do differently.  Anyways, since I was at a bakery, you know I gotta get dessert.  They didn’t have any carrot cake!   How terrible is that?  So I let my mom pick the dessert.  She chose a slice of black and white cake.  Not really a slice, but more like a slab of cake.  It was really tasty.  But I’m an icingoholic.  The icing to cake ratio was totally off.  We ended up leaving about 1/3 of the naked cake on the plate.  I have friends that don’t like icing.  I just don’t understand how that is humanly possible…



A Perfect Friday

Today was a perfect day.  My mom came in to town last night.   I took the day off so we could hang out all day.  We walked the dogs first thing this morning.  After the walk, we did a 30 minute total body resistance workout.  Short and sweet.

After the workout, we were starving!  Anytime my mom comes to visit, she always requests Le Peep.  It’s a yummy breakfast and lunch spot that’s only open til 2.  It can be a little pricey for breakfast, but it’s a nice treat every once in a while.  There lunch menu always sounds pretty good, but I never can get past the pancakes.  I’ve had pancakes on my brain for the last couple weeks.

I love their pancakes.  Big, fluffy pancakes.  The hole in the center is where the butter mound has sunken down into oblivion.  Drenched in sugar free syrup.  (That makes up for the butter.)  I dove right into my egg dish, then realized I hadn’t taken a picture yet.  Oops.

Crisp bacon, mushrooms, tomatoes, chives and cheese all folded into scrambled eggs.  So good.  And just the perfect portion.  My mom got the same thing, but she opted for the rosemary potatoes and thick wheat toast.

With full bellies, we were off to the Galleria.  I had never been to a Lululemon store before.  I’ve admired their clothing in magazines and on fitness dvds.  My friends rave about their clothes.  I just have a hard time spending so much on workout wear.  My closet is full of Nike, Adidas and Gapbody.

I decided to give one of their sports bras a try.  I’ve been looking for the perfect “no bounce” sports bra.  I tried on the Ta Ta Tamer because I had heard good reviews on it.  It seemed pretty good.  I actually bought one off of ebay a few days ago, but I haven’t received it yet.  I really liked the 50 Reps Bra and the Shape Me Bra.  They were pretty limited in my size.  I ended up getting the 50 Reps Bra.  It’s got removable cups and medium support.  I think it will be good for everything except Turbo Fire and HIIT workouts.  It was pretty comfortable in the store.  The real test will come during an actual sweat session.  Hopefully it will be well worth the money!

I heart Rosa’s Tortilla Factory

Rosa’s Tortilla Factory is one of my favorite places to eat.  I got hooked in high school.  I would eat a very nutritious lunch consisting of a bean burrito, tortillas and queso.  Anytime I would make a trip back to my hometown, I had to make a stop at Rosa’s.  Until now.  As of Friday, a Rosa’s opened less than 2 miles from my house.  Can you say dangerous?  I can feel my butt growing as I type.

It’s gonna take a lot of self control to not pull in to the parking lot every time I drive by.  They make their tortillas fresh every day.  They are so fluffy.  But they definitely do not qualify as clean eats.  Bleached white flour.  Bummer.

Oh well.  Rosa’s can be a cheat meal every once in a while.  Like tonight.  I had 2 chicken soft tacos and 2 tortillas with queso.  As long as a few bites of beans.  And I am overly stuffed.  I just don’t feel overly stuffed until I get in the car to go home.  Then it’s too late.

I could live on bean burritos!

Just Another Monday

I woke up this morning wanting chocolate.  No, needing chocolate.  So I whipped up a chocolate banana smoothie.  At the last second, I tossed some peanut butter in the mix.  It was delish!  I could actually taste it!  Which was wonderful, because I’ve been sick the past week and haven’t been able to taste much of anything.

  • 1/2 cup Unsweetened Chocolate Almond Breeze, almond milk
  • half of a frozen nanner
  • scoop chocolate protein powder
  • one packet diet hot cocoa
  • 1/2 Tbsp chia seeds
  • 1/2 Tbsp chocolate PB2 (powdered peanut butter)
  • handful of ice

However, that was the end of my smelling/tasting for the day.  I am now completely congested and have had a major headache all day.  Yuck.

I was supposed to do some cardio today after work.  I had planned on doing a HIIT workout since I haven’t kicked my butt with a good workout in a week due to the whole being sick business.  But, since I’ve been dragging all day, I decided to take it easy again today and skip the sweat session.

I love salads.  I crave salads.  I can’t go more than 2 days without having a salad.  So I usually have one for dinner.  Sometimes it’s my entree.  Sometimes I just have a side salad.  Tonight I made a Southwest chicken salad.  A little romaine and spinach, broccoli slaw, salsa, grilled chicken all topped off with a greek yogurt ranch dip.

I put about 1/4 cup of salsa to serve as my salad dressing.  I’m a bit of a weenie when it comes to spicy food.  I thought maybe this would help open up my sinuses.  I was wrong.  My tongue was on fire, but I still couldn’t breathe.

Rizzo always waits patiently for a bite.  He like romaine.  I gave him a few bites BEFORE I made my salad.  I’m going to go take some cold medicine and go to bed.  Hopefully tomorrow I can breathe.

A New Chapter

I am stepping out of my box.  I have decided to try something new.  I have been contemplating writing a blog for a while now, but have been to chicken to do it.  I was afraid no one would read it or even care.  But I’ve decided that I don’t care if anyone reads it.  At the very least, this is going to be a journal for me to keep about my life.  I’ll talk about my daily experiences, new recipes I’ve tried and review different products and bargains.  And hopefully I’ll meet some interesting people in the blog world.   So here it goes…

 

I woke up this morning, and the weather was perfect for a dog walk.  The heat this summer in Dallas has been miserable.  It’s been about a million degrees for the last 3 months.  We finally got a cool front, and now it’s only in the 90’s.  However, I’m still looking forward to the fall temperatures!  My poor dogs have been stuck in the house all summer.  I have a couple of four-legged kiddos;  Aspen, a siberian husky, and Rizzo, a lab heeler mix.  They are both 10 years old.  And they still jump around like puppies when we get ready for our walks.

After walking the dogs, it was time for breakfast.  I made my wonderful husband, Ridge, a quiche with ham, onion, sauteed potatoes, and jalapeno jack cheese in a whole wheat crust.

He gave it a 7/10.  Not a big fan of the crust.

I wanted something a little different.  So I made a scrambled egg with egg whites, onions, a little ham and some cheese.

Next, I whipped up some protein pancakes.

  • 3 egg whites
  • 1/3 c low fat cottage cheese (I like Daisy–no yucky added ingredients.)
  • a little less than 1/2 c oats
  • 1/2 tsp each vanilla, cinnamon and baking soda

 

Toss all in a blender until liquified.  Unless you like lumpy pancakes.  Then I suppose you could just mix with a spoon.  After blending, let rest for about 5 minutes.  Then cook on a griddle just like regular pancakes.  I enjoyed mine with sugar free syrup.  Yum!

Protein Pancakes

A very filling, delicious breakfast.  Satisfied my craving for IHOP, plus it’s much healthier.
