Just Another Monday


I woke up this morning wanting chocolate.  No, needing chocolate.  So I whipped up a chocolate banana smoothie.  At the last second, I tossed some peanut butter in the mix.  It was delish!  I could actually taste it!  Which was wonderful, because I’ve been sick the past week and haven’t been able to taste much of anything.

  • 1/2 cup Unsweetened Chocolate Almond Breeze, almond milk
  • half of a frozen nanner
  • scoop chocolate protein powder
  • one packet diet hot cocoa
  • 1/2 Tbsp chia seeds
  • 1/2 Tbsp chocolate PB2 (powdered peanut butter)
  • handful of ice

However, that was the end of my smelling/tasting for the day.  I am now completely congested and have had a major headache all day.  Yuck.

I was supposed to do some cardio today after work.  I had planned on doing a HIIT workout since I haven’t kicked my butt with a good workout in a week due to the whole being sick business.  But, since I’ve been dragging all day, I decided to take it easy again today and skip the sweat session.

I love salads.  I crave salads.  I can’t go more than 2 days without having a salad.  So I usually have one for dinner.  Sometimes it’s my entree.  Sometimes I just have a side salad.  Tonight I made a Southwest chicken salad.  A little romaine and spinach, broccoli slaw, salsa, grilled chicken all topped off with a greek yogurt ranch dip.

I put about 1/4 cup of salsa to serve as my salad dressing.  I’m a bit of a weenie when it comes to spicy food.  I thought maybe this would help open up my sinuses.  I was wrong.  My tongue was on fire, but I still couldn’t breathe.

Rizzo always waits patiently for a bite.  He like romaine.  I gave him a few bites BEFORE I made my salad.  I’m going to go take some cold medicine and go to bed.  Hopefully tomorrow I can breathe.


A New Chapter


I am stepping out of my box.  I have decided to try something new.  I have been contemplating writing a blog for a while now, but have been to chicken to do it.  I was afraid no one would read it or even care.  But I’ve decided that I don’t care if anyone reads it.  At the very least, this is going to be a journal for me to keep about my life.  I’ll talk about my daily experiences, new recipes I’ve tried and review different products and bargains.  And hopefully I’ll meet some interesting people in the blog world.   So here it goes…


I woke up this morning, and the weather was perfect for a dog walk.  The heat this summer in Dallas has been miserable.  It’s been about a million degrees for the last 3 months.  We finally got a cool front, and now it’s only in the 90’s.  However, I’m still looking forward to the fall temperatures!  My poor dogs have been stuck in the house all summer.  I have a couple of four-legged kiddos;  Aspen, a siberian husky, and Rizzo, a lab heeler mix.  They are both 10 years old.  And they still jump around like puppies when we get ready for our walks.

After walking the dogs, it was time for breakfast.  I made my wonderful husband, Ridge, a quiche with ham, onion, sauteed potatoes, and jalapeno jack cheese in a whole wheat crust.

He gave it a 7/10.  Not a big fan of the crust.

I wanted something a little different.  So I made a scrambled egg with egg whites, onions, a little ham and some cheese.

Next, I whipped up some protein pancakes.

  • 3 egg whites
  • 1/3 c low fat cottage cheese (I like Daisy–no yucky added ingredients.)
  • a little less than 1/2 c oats
  • 1/2 tsp each vanilla, cinnamon and baking soda


Toss all in a blender until liquified.  Unless you like lumpy pancakes.  Then I suppose you could just mix with a spoon.  After blending, let rest for about 5 minutes.  Then cook on a griddle just like regular pancakes.  I enjoyed mine with sugar free syrup.  Yum!

A very filling, delicious breakfast.  Satisfied my craving for IHOP, plus it’s much healthier.
