Fuzzy’s Taco Shop

This week flew by!  But here’s a few notable highlights…

I somehow managed to wash a brand new pack of lightbulbs.  I didn’t notice they fell into the washing machine…

I made a fast frittata dinner that consisted of items I needed to use up in the fridge.  Ham, feta, parmesan, colby jack, mushrooms…It turned out pretty tasty.  But then again, I think eggs are always tasty!

We took the dogs on a walk Saturday morning.  The weather was Amazing!  Yea for October!!!  But when we got home, I noticed that Aspen’s paws were tinted blue!

Aspen usually has the nickname “Grinch Paws” because they are so hairy.  She slips and slides all over the tile.  We have to trim them for her.  Today, she has smurf paws 😉

We must have walked through fertilizer.  I tried to wash em, but the color won’t come off.  I just hope it doesn’t harm her.

We went to Fuzzy’s Taco Shop for dinner tonight.  I love this place.  Good food.  Good prices.  Very laid back.

They are known for their tacos, which is what Ridge ordered.  But I really like their chicken nachos!

Chips on the side cuz I don’t like soggy chips.  There IS chicken under that pile of lettuce.  And feta cheese and pico de gallo.  And I was tempted by a new drink they added to the menu…

Fuzzy’s Frozen Vodka Lemonade!

Ridge drank most of it.  It was just too much for me.  It gave me a brain freeze and a chest freeze!

As for my discomfort the last few days…I woke up Thursday morning with 3 bites on my leg and 1 on my hand.  It itched like CRAZY!  The bumps kept growing as the day went on and turned into knots.  Then I woke up Friday, and the spot on the back of my leg looked like this…

At this point, I got worried.  One of the doctors I work with told me I should go see my doctor.  My doc said it was some kind of bug bite and I was just having a severe reaction.  He drained it (ouch!).  I got a cortisone shot and was told to take an antihistamine.  It looks a little better now, but still kinda gross.  I’m just glad it’s not MRSA!

Dirty Ants?

I was greeted by an ant in my shower this morning.  Normally I would’ve squashed the little booger with my finger, but I decided to just watch him struggle to crawl up the tile.  Where the heck did he come from?  There are no windows in my bathroom (depressing) and I don’t keep food in the shower (shocking, I know).

Anyways…Breakfast was a burrito.  La Tortilla Factory EVOO Multigrain wrap.  I spread refried beans, topped with a slice of Colby Jack cheese and a little egg substitute.  Portable comfort food.

I opted for an easy take-to-work lunch.  I stopped at Simply Fit Meals and picked up some salmon & veggies.

Simply Fit Meals is a pretty neat little concept.  You go into the shop and select your ready to eat meal from about 20 different entrees they keep stocked in their fridges.  Always fresh, never frozen.  Try to use as much local and organic ingredients as possible.  My salmon was pretty tasty, but I swear it tasted like it had oil drizzled over it.  But according to the nutritional info, it didn’t.

Once I got home from work, I did a TurboFire HIIT workout.  I love those DVDs.  They are so much fun!  They keep me entertained and the time usually flies!  After my sweat session, I headed to the bathroom for shower #2.  This time I was greeted with 2 ants.  Wierd.  Is that a sign?

 

 

 

 

 

Smoothie, Omelet and That’s a Wrap!

I’ve always been a breakfast eater.  My single, working mother made my brother and I breakfast every morning.  It really is the most important meal of the day.  Most mornings, I either want a protein shake or eggs.  This morning, I wanted both.

Breakfast #1:

Chocolate Berry Smoothie

Chocolate Berry Smoothie:

  • 50 grams frozen blueberries
  • 50 grams frozen strawberries
  • 1 scoop chocolate protein powder
  • 1/2 cup Unsweetened Chocolate Almond Breeze
  • one diet hot coco packet
  • handful ice + a little water

Toss it all in my Vitamix and voila!  I got a new smoothie cup yesterday.  I already own 2 Tervis/Fiesta cups.  They make so many designs.  I would like one of each, please. 😉

Breakfast #2:

(about 2 1/2 hours later)

Ham & Cheese Omelet

I used 1 egg + 1/3 cup egg substitute, 1 oz nitrate free ham, and 1/2 oz of Colby Jack cheese.  I made the omelet at home and then just reheated it at work.

Lunch consisted of a turkey wrap with spinach, tomato, and a Laughing Cow garlic cheese wedge.  Yum!

I resisted the goodies at work today.   I work at a cardiology center which means lots of drug reps come to visit.  They are supposed to bring heart healthy food for our group.  That rarely happens.  This morning was pastries and bagels.  This afternoon was ice cream.  But I resisted temptation all day!  (Including the peanut M&Ms one of my coworkers brought.)  Woohoo!
