This week flew by!  But here’s a few notable highlights…

I somehow managed to wash a brand new pack of lightbulbs.  I didn’t notice they fell into the washing machine…

I made a fast frittata dinner that consisted of items I needed to use up in the fridge.  Ham, feta, parmesan, colby jack, mushrooms…It turned out pretty tasty.  But then again, I think eggs are always tasty!

We took the dogs on a walk Saturday morning.  The weather was Amazing!  Yea for October!!!  But when we got home, I noticed that Aspen’s paws were tinted blue!

Aspen usually has the nickname “Grinch Paws” because they are so hairy.  She slips and slides all over the tile.  We have to trim them for her.  Today, she has smurf paws ;)

We must have walked through fertilizer.  I tried to wash em, but the color won’t come off.  I just hope it doesn’t harm her.

We went to Fuzzy’s Taco Shop for dinner tonight.  I love this place.  Good food.  Good prices.  Very laid back.

They are known for their tacos, which is what Ridge ordered.  But I really like their chicken nachos!

Chips on the side cuz I don’t like soggy chips.  There IS chicken under that pile of lettuce.  And feta cheese and pico de gallo.  And I was tempted by a new drink they added to the menu…

Fuzzy’s Frozen Vodka Lemonade!

Ridge drank most of it.  It was just too much for me.  It gave me a brain freeze and a chest freeze!

As for my discomfort the last few days…I woke up Thursday morning with 3 bites on my leg and 1 on my hand.  It itched like CRAZY!  The bumps kept growing as the day went on and turned into knots.  Then I woke up Friday, and the spot on the back of my leg looked like this…

At this point, I got worried.  One of the doctors I work with told me I should go see my doctor.  My doc said it was some kind of bug bite and I was just having a severe reaction.  He drained it (ouch!).  I got a cortisone shot and was told to take an antihistamine.  It looks a little better now, but still kinda gross.  I’m just glad it’s not MRSA!

My hair is crying.

I got my hair did today.  I was in desperate need for a trim and some hilights/lowlights.  (My original appointment had to be rescheduled, so It’s been a ponytail week).  My hair feels so much better, although it is a little darker than I would’ve liked.  Oh well, I can always add more hilights later.  But I got some really devastating news!  My hairdresser is retiring to be at home with her son.  Yea for her!  BOOO for my hair!  It took me years to find a good, affordable hairdresser in the Dallas area.  Now I have to start the search all over again.  Yuck.

Anyways, for dinner tonight, I was jonesin’ for a chef salad.  (My version of a chef salad.)  Ridge and I stopped at Jason’s Deli over the weekend and picked up a pint of their ranch.  Something about restaurant ranch that makes it taste a million times better than store bought.  I can’t quite duplicate it at home.  I know they put gobs of fat in their dressing, but I used the fork-dip method so I think I did minimal damage in the calorie department.

Crunch. Ridge complains that I crunch too loud.  He is just now telling me this after being together 12 years.  Hmm.

I’m really glad fall is here, but I don’t want to give up super ripe summer fruit yet.  Like watermelon.  I had a big bowl for dessert.

The watermelon was not super red, but it hit the spot for my sweet tooth!  And now off to watch Glee.

Guacamole Goodness!

We are in the process of refinancing our casa.  The title company sent a notary over to our house so we could sign the papers.  It was so nice to be able to close on our house, at our house!  Good customer service.  Anything to save me from having to drive all over town and I’m happy.  Anywho, I needed to make a quick dinner.  Taco Salad!

For my dressing, I used salsa and a little Skotidakis ranch greek yogurt dip.  I like it better as a salad dressing than as a dip.

When I was at Sprouts the other day, I picked up some avocados…39 cents each!!!

Time for Guac!

I sliced one avocado into sections and tossed it in the bowl.  The other avocado I just cut in half and peeled it.  Why?  I dunno, cuz I got tired half way through making guac?

Add about a tablespoon light sour cream and a few shakes of the mexican seasoning…

Stir in a few spoonfuls salsa.  I like chunky guac.  (I do not like chunky thighs.  The MUFAs in avocados are supposed to help with the chunky thighs.)  I really prefer pico mixed in my guacamole, but I didn’t have any.  So, salsa it is!

I let Ridge start chowin’ down on the guac and chips while my pita chips were baking.  I like to make my own pita chips rather than buy a bag from the store.  The ones that are pre made are always too thick.  I like em thin, just like chips.

A few of the pita chips are a little more “golden” than I would have prefered.  But I’m sure I’ll still eat them.  I’ll just have to put a double portion of guac on those chips and suffer through.  ;)

By the time I swiped the guac back from Ridge, this is all that was left!  We both could eat our weight in guacamole.  But that’s ok, it was the perfect amount for me.

Dirty Ants?

I was greeted by an ant in my shower this morning.  Normally I would’ve squashed the little booger with my finger, but I decided to just watch him struggle to crawl up the tile.  Where the heck did he come from?  There are no windows in my bathroom (depressing) and I don’t keep food in the shower (shocking, I know).

Anyways…Breakfast was a burrito.  La Tortilla Factory EVOO Multigrain wrap.  I spread refried beans, topped with a slice of Colby Jack cheese and a little egg substitute.  Portable comfort food.

I opted for an easy take-to-work lunch.  I stopped at Simply Fit Meals and picked up some salmon & veggies.

Simply Fit Meals is a pretty neat little concept.  You go into the shop and select your ready to eat meal from about 20 different entrees they keep stocked in their fridges.  Always fresh, never frozen.  Try to use as much local and organic ingredients as possible.  My salmon was pretty tasty, but I swear it tasted like it had oil drizzled over it.  But according to the nutritional info, it didn’t.

Once I got home from work, I did a TurboFire HIIT workout.  I love those DVDs.  They are so much fun!  They keep me entertained and the time usually flies!  After my sweat session, I headed to the bathroom for shower #2.  This time I was greeted with 2 ants.  Wierd.  Is that a sign?

 

 

 

 

 

Pesto Mayo

A friend of ours gave us a humongous bag of basil from his garden.  What to do with a gallon size bag of basil?  Pesto!

Homemade Pesto

  • 1/4 cup Extra Virgin Olive Oil
  • 1/2 cup walnuts
  • 2 cups firmly packed fresh basil leaves
  • 1/2 cup fresh grated Parmesan
  • 4-6 cloves peeled garlic (depending on if you’re a garlic lover)
  • 1/4 teaspoon salt
  • pepper to taste

Combine all ingredients in a food processor or blender.  Process until almost smooth.  Add pepper to taste.

I actually made a REALLY big batch of pesto because I had so much basil.   I saved some pesto to eat now, and froze the rest…

No, that’s not what it looks like (horse manure).  I froze the pesto in an ice cube tray.  I put the pesto cubes in a freezer bag that way I can just pop one out of the freezer whenever I need pesto.

Now, to the star of the show:

Pesto Mayo

I took about 2 teaspoons pesto and mixed it with about 1/4 cup of olive oil light mayo.  You can adjust the ratio of pesto:mayo depending on your taste.  Super easy and one of the yummiest things you can put on a sandwich.  Also really tasty when used as a base for chicken salad if you’re tired of plain ol’ boring mayo.

Now for the important part.  My lunch.

Spread a nice layer of pesto mayo on both sides of the toasted whole wheat sandwich thin.

Layered on a handful of organic spinach leaves, tomato slices and warm turkey slices.  So good.  Much better than any sandwich I would buy from a sandwich shop.  I’m not sure why I don’t treat myself to this meal more often.

 

 

 

 

I Have Garlic Breath. But I Dont’ Care!

My husband hates it when I eat garlic.  It seeps out my pores for days.  I personally can’t smell it, but he can smell it when I walk in the door!  Oh well, he loves me anyways.  And he knows that if I had to choose between him and garlic, he might be out on the street.

 

Chicken Caesar salad with freshly grated parmesan cheese, tomatoes and broccoli slaw.  Litehouse light caesar dressing on the side.  This is one of my go-to salads.  Can’t get enough of it.

And what’s that little piece of garlicky goodness on the side?

It’s just some of the BEST garlic bread I have ever had.  I bought a small, round, wheat garlic bread from Whole Foods.  Surprisingly, not very expensive either.  Cut it into four pieces because I was trying to have a little self control.  (I easily could’ve eaten the whole 7″ diameter loaf.)  Added a little bit of Colby Jack cheese on top and into the toaster oven it went.  It was AMAZING!  I will definitely make a special trip back to Whole Foods just to get more of this garlic bread.

Smoothie, Omelet and That’s a Wrap!

I’ve always been a breakfast eater.  My single, working mother made my brother and I breakfast every morning.  It really is the most important meal of the day.  Most mornings, I either want a protein shake or eggs.  This morning, I wanted both.

Breakfast #1:

Chocolate Berry Smoothie

Chocolate Berry Smoothie:

  • 50 grams frozen blueberries
  • 50 grams frozen strawberries
  • 1 scoop chocolate protein powder
  • 1/2 cup Unsweetened Chocolate Almond Breeze
  • one diet hot coco packet
  • handful ice + a little water

Toss it all in my Vitamix and voila!  I got a new smoothie cup yesterday.  I already own 2 Tervis/Fiesta cups.  They make so many designs.  I would like one of each, please. ;)

Breakfast #2:

(about 2 1/2 hours later)

Ham & Cheese Omelet

I used 1 egg + 1/3 cup egg substitute, 1 oz nitrate free ham, and 1/2 oz of Colby Jack cheese.  I made the omelet at home and then just reheated it at work.

Lunch consisted of a turkey wrap with spinach, tomato, and a Laughing Cow garlic cheese wedge.  Yum!

I resisted the goodies at work today.   I work at a cardiology center which means lots of drug reps come to visit.  They are supposed to bring heart healthy food for our group.  That rarely happens.  This morning was pastries and bagels.  This afternoon was ice cream.  But I resisted temptation all day!  (Including the peanut M&Ms one of my coworkers brought.)  Woohoo!
